I recently got the Mac Air laptop and noticed that the iPhotos can organize my photos by location, date, etc. I really like it and would love to get all my photos organized in a folder like that. I also really like the Faces feature because I can assign name tags to faces and then view just a single person if I want. How do I do this for all my photos which exceed the amount of my Mac Air hard disk space.

These can only be done in iPhoto, but you can easily create an iPhoto Library on an external disk, formatted Mac OS Extended (Journaled) and directly connected to your Mac.

To create a Library:
Hold down the option (or alt) key key and launch iPhoto. From the resulting menu select 'Create Library'
You can format a disk with Disk Utility

You've posted in the Photos forum so we're assuming you're using Photos. If you're using iPhoto the process would be the same.
add an sdxc card 256 GB will give you plenty of space.
Yes iPhoto and Photos are two totally different programs that operate differently to accomplish the same basic goal - Photo management
iPhoto is no longer supported or developed - Photos is supported
